RECIPE: Chickpea Quinoa Salad

Ingredients

3/4 cup organic dried quinoa, drained, rinsed and cooked
15 oz can of organic chickpeas (garbanzo beans), drained and rinsed
1 cup carrots, shredded
1 cup red bell pepper, diced
1 cup celery, diced
1/2 cup red onion, finely diced
1/3 cup flat leaf parsley, diced
3 tbs dried cranberries
2 tbs organic salted sunflower seeds
1 lemon, juiced
1 lime, juiced
1 tbs olive oil
1/2 tsp sea salt
1/2 tsp black pepper
1/4 tsp garlic powder
1/2 tsp curry powder
1/2 tsp ginger powder

1) Prepare the Quinoa

Rinse and drain the quinoa. Cook according to package instructions. Set aside to let cool.

2) Prepare the Chickpeas

Rinse and drain the chickpeas. Set aside.

3) Prepare the Vegetables

Wash and prepare the vegetables.

4) Combine Ingredients and Serve

In a large bowl add the cooked quinoa, olive oil, juice of lemon and lime and spice mixture. Mix thoroughly. Stir in the chickpeas. Then add in the carrots, bell pepper, celery, red onion, parsley, dried cranberries and sunflower seeds. Mix until well combined.
